Where to eat
Florence is a hub of Tuscan cuisine, and the city is famous for its hearty signature dishes such as ribollita, papa al Pomodoro, bistecca alla fiorentina (T-bone steak) or peposo (beef stew, which, according to the legend, was selected by Brunelleschi to fuel his "project Duomo" team of builders). Street-food culture is alive and well here, gifting the city another signature dish, one which taps into the locals’ love for organ meats: lampredotto. Some more helpful vocabulary: Osterias were traditionally rustic in feeling, having evolved from drinking establishments, but nowadays they do not differ much from Trattorias . A trattoria is a simple, no-frills eatery with homestyle fare and affordable prices. Ristorante implies a finer experience, where the cooking is a bit more elevated and the dining room is more likely to have tablecloths and plush seating. However, there are other typologies of places where you can eat both traditional dishes and sandwich or salads, such as bar, bistrot, bakeries etc. Here is a list of places we recommend (see the map).

Lunch during the conference
The following list includes places close to the conference venue where one can have a tasty (and not too slow) lunch at reasonable prices. Some of them are also open at night.

Trattorias and Osterias or the like



Italian Fast food: bar, creperie, bistrot and the like
Although bars are famous for the Italian style of drinking coffee while standing up, during lunch time they often turn into a simple version of osterias. We highly recommend to try at least once, as some places offer very interesting and tasty dishes. Here is a list of places near the conference venue where you can have a nice but ‘fast’ lunch.

It is highly recommended to go to the Mercato centrale, Via dell'Ariento, 50123 Firenze FI: on its first floor one can experience Italian street food. On the various squares nearby, there are lots of nice little and less little restaurants and bars. Here is a few places among the most typical ones in this quarter:
